Gumbo Recipe

A new favorite meal in our house is Gumbo (our friend Jamie made it and we liked it and I learned how to make it from her). There are many kinds of Gumbo, but this is the recipe for the kind pictured here that we like.

Gumbo
Make a ROUX (check online if you're not sure what it is!) with 1 c. flour & 1 c. shortening. To do this, you cook and stir it constantly on medium heat until it becomes very dark brown (but not burnt). This takes 30 minutes to 2 hours depending on how high you turn up the heat (just don't let it burn!).

After Roux is made, SLOWLY add 2 quarts of HOT water while stirring (will bubble up really bad at first).

Next, add 1 lb. sliced polish sausage, 1-2 cut up cooked chicken breasts, 1/2 medium chopped onion, 1/2 chopped green pepper, dashes of "Tony Chachere's" Creole Seasoning (depends on how spicy hot you like your food), and 1-2 bay leaves (remove before eating).

Simmer until vegetables are cooked.

Serve over cooked rice in bowls.
